There’s a common preconception that vegans consume leaves, leaves, and only leaves. Alternatively, there’s the idea that they put together the most complicated and expensive meals. Neither of these could be more wrong…
As a flexitarian, I consume vegetarian dishes throughout the week, and meat and fish at the weekends. This is a great way to do my bit, but that doesn’t mean that anything we cook is complicated. Yes, we eat A LOT of vegetables, but we also cook some pretty simple dishes too.
My homemade fries, alongside the most delicious Tesco Spicy Bean Burgers, is something we consume at least once a week. It’s easy to make, cheap to put together, and makes for a healthy and low calorie meal; what’s not to like? So, to discover how to make this super easy vegan dinner, read on…
Serves 1, Cooking time 30 to 45 minutes
- 1 Large or 4 Small Potatoes
- 1 Spicy Bean Burger
- Half a Packet of Long-Stem Broccoli (or any other vegetables of choice)
- Fry Light Spray Olive Oil
- Sauce of Your Choice to Serve
How to Make Homemade Chips and Spicy Bean Burgers
1. Preheat the oven to 200°C fan, or 180°C normal oven.
2. Wash your potatoes in cold water.
3. Make sure each potato has all its little tufts removed, but keep the skin on.
4. Chop the potatoes into fry shapes. A good way to do this evenly is to cut each potato in half length-ways, place each half on its flat side, and then cut into half-moon fry shapes. Depending on the size of each potato, you’ll have to cup them a little thicker so that they cook evenly, as you can see in the images below:
5. If you want, you can soak the chopped potatoes in a bowl of cold water to remove the starch. This isn’t completely necessary though, so this is your choice.
6. Line a baking tray with tinfoil.
7. Spray the tinfoil all over with fry light oil.
8. Then, sprinkle salt all over the oiled tray, so that each fry is covered underneath with salt.
9. Place your fries flat on the tray, making sure there’s no overlap, so that they cook evenly and go crispy.
10. Spray the potatoes with oil, and sprinkle salt over the top.
11. Place in the oven for around 30 minutes. Keep checking on them after the 20 minute mark, and take them out when they’re golden and crispy.
12. Meanwhile, line another tray with tinfoil, and place one burger per person onto the tray, ready for the oven. These take around 20 minutes to cook, so place in with the fries when they’ve been in for around 15 minutes. It’s a game of judgement, so if you think the fries need a little longer, wait a little longer to put the burgers in. With any luck, they’ll then be ready to plate at the same time.
13. Now, it’s time to prepare our veggies. Give the broccoli a wash under cold water, and cut off the ends.
14. If your saucepan can’t fit the broccoli into it, like mine, cut the broccoli pieces in half so they fit.
15. Around 10 minutes before the end of cooking time for your homemade potato chips and burgers, fill the kettle up with cold water and turn it on.
16. Once the water is boiled, pour it into a salted pan, turn on the stove, and add the broccoli. This should take around 8 minutes to cook, give or take.
17. Once everything is cooked and ready, it’s time to plate up. Add each element onto a third of the plate, as you can see below.
18. Add any sauce of your choice – I love salad cream on mine – and enjoy!

The burgers themselves are packed full of delicious protein, and are only 213 kcal each. Couple this with the minimal calories in your spray oil and broccoli, and the few hundred in your potato, and it’s really only the sauce that adds more calories.
Alternative Ingredient Ideas
Everyone has different likes and dislikes, so it’s important to choose ingredients that you love. This way, your vegan or weight loss journey will become a lot easier. So, some great dietary alternatives for this meal include:
- Choose a vegan sauce alternative if you’re a die-hard vegan, for example, BBQ sauce and tomato ketchup are both vegan choices.
- Choose vegetables you love the most, for example, we sometimes add asparagus. You could also add peas, sweetcorn, carrots, or whatever you want!
- If you can’t access Tesco, most other supermarkets have their own version of this bean burger. We’ve actually recently purchased the ASDA version of it, and are yet to try it, and I’m sure it’ll do the trick!
